How does oil change when heated?

olive oil for e.g is good taken unheated for essential fatty oils,but when used to fry food its not so good.

fried foods are more cancer causing.How does oil change when heated?im guessing its because the heating process may change its molecular structure which in turn slightly tweeks its medicinal qualities but wouldneed further research.



oh oh oh did you know if you have a packet of crisps (chips for our american friends) every day for a year by the end of the year you'll have consumed 3 liters of vegetable oil? i bet those crisps dont seem so appealing now do they?
